Featured Recipe: Scattered, Smothered and Covered Breakfast Casserole
My daughter Rachel’s birthday is slap in the middle of summer. So the birthdays of her youth were often spent on our family vacation or one of her summer mission trips. So she has celebrated in some pretty amazing locals: London, The Hague, and Cochabamba, Bolivia just to name a few.
This year was her 22nd birthday. Big family vacations and summer-long expeditions are a thing of the past. All her friends are working full-time jobs now that they are “in the real world”. But that didn’t keep me and a few of her friends from wanting to celebrate her in style, despite our different seasons of life, now.
Time restricted and space restricted, I pulled out all the Desperation Entertaining tips I had written about years ago. My favorite: doubling the size of the dining room table by adding another table adjacent to it and covering it with the same tablecloth. This ingenious trick has everyone sitting together with the birthday girl at the head of the table.
Candles have always added a sense of drama to any occasion, and my auction find of English sterling candelabras were perfect sitting atop beveled mirror squares. A few fresh flowers and the decorations were done!
Now that everyone is of drinking age, Mimosas could flow all morning in my brand new “old” champagne glasses I found for $1 for all eight! And they are real glass. Check out my easy Mimosa recipe.
The menu is super easy: everything easily prepared before the guests arrive. I hope this inspires you to celebrate no matter your life season or your “small” circumstance.
